At Woodford Reserve, the barrels age in limestone rickhouses that have held bourbon through Kentucky summers and winters for generations. On a cool October morning when you open the door of one of these structures, the smell is immediate and specific — the evaporated portion of the aging bourbon that rises into the air of the rickhouse, the fraction called the angel's share. It's both a loss and a promise: what the angels take is the price the distillery pays for what's left behind.
I composed this image to capture the warmth and texture of the bourbon aging environment — the stacked barrels, the light filtering through the rickhouse, the deep colors of the oak and the amber spirit showing through the bung holes where you can see the liquid level. The red, gold, and brown of the barrels against the warm wooden backdrop is the visual equivalent of what the nose already knows when you walk in. This photograph is the angel's share of the distilling experience.
